To conclude my story, my husband came home early to help solve my problem.  He whipped out a bunch of power cords from the closet and started testing out my laptop, and when you least expect it, voila… my laptop started.  Just fyi, a Hewlett Packard power cord revived a Dell laptop. Who knew? And more importantly, who cares, I was thrilled… my issues got resolved much faster… the team was happy, thus I was happy… all because my husband, my savior came to my rescue. I guess sometimes us women do need rescuing!!!  🙂 NUTRITION: Eggs are a good source of Protein and Vitamin D.  I chose to use Brown Rice for this dish… adds some Fiber to this dish. INGREDIENTS:

Cooked Brown Rice – 1.5 cups (leftover) Scallions – 1 bunch (chopped in 1 inch pieces) Onion – 1 small (diced) Egg – 1 (scrambled) Canola Oil – 3/4 tbsp or 1 tbsp Soy Sauce – 1 tbsp Rice Vinegar – 1 tbsp Asian Chili Sauce – 1/2 tbsp salt to taste

DIRECTIONS:1. Here is how much brown rice I had leftover… roughly 1.5 cups of cooked rice. 2. Here are my ingredients, use a small onion, medium will be too much.  You can add frozen vegetables too since this is quick and easy. 3. Here are the sauces you will need. 4. Heat a pan on medium-high heat (dial #7).  Add oil.  Add egg. 5. Cook for 20 seconds or so until slightly cooked. 6. Add the scallions and onions.  Season with very little salt.  Saute for 1 minute.  7. Add the brown rice.  Combine and saute for about 2 minutes. 8. Add the soy sauce, rice vinegar and chili sauce.  9. Combine.  Cook until rice is hot.  Turn off the stove. 10. And I was back to work after a yummy meal  🙂
