It’s a new year, a great time to start fresh and undo the damage some of us may have done over the holidays! Too many cookies? cupcakes? Not enough time to exercise… We all fall into that trap in December! My resolutions are to get to the gym more, and get organized! I’m even getting rid of some of my lightly or barely used cookbooks because my shelves are over-flowing! Steak and Cheese Sandwiches with Onions and Mushrooms I’m a sucker for a good cheese steak. Carne Bistec (Colombian Steak with Onions and Tomatoes) The men in your house will thank you for this one! Crock Pot Pernil (Puerto Rican Pulled Pork) My husband’s favorite! Chicken Shiitake and Wild Rice Soup Excellent soup! Pasta with Chicken Sausage and Broccoli Rabe My favorite pasta dish, lightened up. Arroz Con Pollo, Lightened Up Great one pot meal! Zesty Lime Shrimp with Avocado Salad Light and delicious. Swedish Meatballs My teen loves these! Easiest Pasta and Broccoli Recipe Perfect dish for picky kids! My toddler loves this! Sofrito Chicken Stew Delicious and inexpensive.
