Bigger pan: When you are cooking up your fudge, go for the larger saucepan for your ingredients. They will expand while heating up. This way, you won’t have any of your ingredients overflowing! Sugar crystals: You want your fudge smooth and sugar crystal free! If you are having a hard time doing this, try a recipe that calls for marshmallow or corn syrup instead! These will prevent that from happening and your fudge will be silky smooth. Don’t stir: I know it’s tempting to continue, but after your bring your it to a boil, stop stirring. As soon as it reaches temperature, take it off the heat immedietly and DON’T STIR IT. This causes any sugar crystals to multiply and will cause it to seize. Use a thermometer: Don’t try and figure out how to cook thes recipes without one. A candy thermometer is a MUST.
