What is Lavash Bread Pizza
Lavash Bread Pizza or Lavash Flatbread Pizza is essentially a thin-crust Veggie Flatbread Pizza. There is no need to get your hands dirty or roll out the dough. Lavash bread is a healthier alternative to regular pizza and it comes together in a jiffy. For this recipe, I used mushrooms, spinach, and kalamata olives as my toppings along with Rao’s Arrabbiata Sauce. Feel free to change up your toppings and sauce brand as need be. Ingredients
Whole Wheat Lavash Bread: I love using Trader Joe’s whole wheat lavash for this recipe for a boost in fiber and protein. If you don’t have a Trader Joe’s near you, try finding lavash bread at your local Middle Eastern grocery store or a regular grocery store. Parmesan Cheese: I love the flavor of parm on this pizza, however you can use fontina or mozzarella cheese if you prefer. Mushrooms: Sliced Baby Bella Mushrooms – you may also use white button mushrooms. Spinach: I love using fresh baby spinach. Olives: Kalamata olives – sliced, else you may use regular olives or green olives. The olives will add some saltiness to the pizza. Basil: Fresh basil adds a ton of flavor to this pizza. Julienne the basil, or chopping works fine too. Marinara Sauce: I recommend using a good quality marinara sauce or pizza sauce, such as Rao’s. For this recipe, I used Arrabbiata sauce which is slightly spicy. Oil: You need oil to saute the mushrooms and spinach. I recommend Avocado Oil or Olive Oil. Crushed Red Pepper Flakes: If you like spicy food, add some crushed red pepper flakes once your pizza is ready. Salt: Lightly season the mushrooms and spinach. The cheese and olives are already salty, so don’t add too much salt when seasoning the veggies.
Step by Step – How to Make Lavash Bread Pizza Recipe
Step 1 – Prep
- Heat up a cast iron skillet on medium heat, once hot, add oil.
- Add sliced mushrooms. Saute for 3 minutes and season with a little salt.
- This is what you should have.
- Add 5 ounces of spinach. Season with salt to taste. Cook for 3 minutes or until the spinach wilts.
- Once veggies are cooked, turn off the stove.
- Transfer the spinach mushroom mix to a paper towel to help soak the moisture. Doing this step will ensure your pizza won’t be soggy.
Step 2 – Assemble
- Split whole wheat lavash bread (I love Trader Joe’s) in half.
- Spread 2 spoonfuls of your favorite marinara sauce (I used Rao’s Arrabbiata Sauce). Don’t add too much sauce else your pizza will be soggy.
- Spread some of the spinach mushroom mixtures. Also, top with sliced olives.
- Top with shredded parmesan cheese.
- Place the lavash bread into a toaster oven on a baking tray and bake at 400 degrees for 5-6 until crispy and the cheese melts. The lavash bread will get toasty.
- Once done, remove the pizza from the toaster oven.
- Cut lavash pizza into fours. Top with julienne basil and crushed red pepper.
- Enjoy!

You may top your Lavash Bread Pizza with: ✔️ When baking the pizza in the toaster oven, make sure you check the pizza after 4 minutes for your desired crispiness. Bake for another minute or two depending on how crispy you want your pizza.
Fresh Basil, julienned (as suggested per this recipe) Crushed Pepper Flakes (as suggested per this recipe) Garlic Powder, Oregano, Italian Seasoning, and Black Pepper are other additions.
Meal Prep Ideas
Lavash Pizza is a great way to use up leftover veggies.
Saute the veggies as needed and allow the liquid to absorb fully before placing the veggies in the fridge. Store the veggies in an airtight container and place in the refrigerator for up to 3-4 days. The remaining ingredients – lavash bread, parmesan cheese, marinara sauce, and kalamata olives are readily available ingredients that don’t require much prepping at all.
