Grilled Garlic Dijon Herb Salmon

This grilled salmon is seasoned with a Dijon mustard sauce made with Dijon, herbs de Provence, red wine vinegar, olive oil, and garlic for an easy dinner. I’m always trying to develop new, creative ways to eat this flavorful fish because of all the health benefits the omega-3s provide. How to Cook Salmon

I used a cast-iron grill pan to cook this Dijon herb salmon, but an outdoor grill also works. Make sure the grates are clean and oiled to prevent sticking. If you don’t own a grill, you can also make it in your oven’s broiler, adding the mustard sauce during the last minute of cooking. My salmon fillets were about one inch thick, which take nine to ten minutes to cook through. If your fish is thinner, reduce the total cooking time. It’s done once the fish flakes with a fork and is still a little translucent.

What to Serve with Dijon Herb Salmon

I served my Dijon salmon with Prosciutto-Wrapped Asparagus. It would also be great with roasted green beans, a salad, or orzo.

Variations:

Herbs: Herbs de Provence is a French herb mixture that typically includes dried fennel, thyme, rosemary, marjoram, and others. If you don’t have herbs de Provence, you can use any mix of dried herbs that you like. Fish: Frozen salmon will work if you don’t have fresh. You can use this Dijon sauce on any fish, like halibut, flounder, or mahi mahi.
