I absolutely love Papdi Chaat. It’s one of my favorite Indian Street Food items to order when dining at an Indian fast food here in the United States. When I visit India however, that’s a different story. In India, I am unable to stomach any of the dairy or chutneys, so it becomes rather difficult to enjoy street food there. The only place I can handle and trust is Haldiram’s. This recipe is like a chaat salad, which is essentially the best of both worlds.  Here are similar Kachumber Salad recipes that are just as delicious – Bean Corn Kachumber Salad and Mango Chickpea Kachumber Salad.

What is Corn Chaat Kachumber Salad?

Corn Chaat Kachumber Salad is a healthier spin on Papdi Chaat. It is essentially a combo of Corn Chaat + Kachumber Salad recipes along with some Papdi Chaat flavors. The traditional Indian Kachumber Salad consists of tomatoes, onions, tomatoes, lime juice, and chat masala.  Corn Chaat consists of corn, onions, tomatoes, cilantro chutney, tamarind chutney, and chat masala. I also created a cilantro tamarind dressing with olive oil which is delicious.  Combine all these recipes and throw in some papdi for a little crunch and indulgence, and you’ve got yourself a delicious and healthy-ish salad that’s not boring.

Ingredients for Corn Chaat Kachumber Salad:

Corn: I used frozen organic corn that I thawed, rinsed, and drained. Tomato: Dice the tomatoes. Red Onions: Dice the onions. Cucumber: Dice the cucumbers. Papdi: This adds a nice crunch to the salad and goes well with all the chatpata flavors.  Cilantro Chutney: Here is my Cilantro Chutney recipe. Tamarind Chutney: I use store-bought. Olive Oil Red Chili Powder: You can use Cayenne Pepper instead of red chili powder here. Salt Lime Juice

How to make Corn Chaat Kachumber Salad recipe step by step?

Make the cilantro tamarind dressing

  1. In a mason jar, add tamarind chutney, cilantro chutney, olive oil, and chat masala. 
  2. Cover with a lid. 
  3. Shake the jar well. Your dressing is ready.

Assemble the Salad

  1. In a large bowl, add rinsed & drained chickpeas.
  2. Add red onions and cucumbers.
  3. Add tomatoes.
  4. Now add corn. I used frozen corn, rinse and drain it.
  5. Add red chili powder, chat masala, and salt. 6, Add all the dressing. 7, Mix well.
  6. Add lime juice.
  7. Add 10 papdis, broken.
  8. Mix. Serve immediately to prevent the papdi from getting soggy. Serve with papdis all around the serving bowl as shown in the main photo.

Serving Suggestions

Serve with papdis on the side. It adds crunch and it’s so good with papdi. For a healthier option, you can enjoy this salad without papdi.

Diwali Party Serving Suggestions

During the festive season of Diwali, you can serve this salad as an appetizer in cute little martini glasses. 

Tips on making Corn Chaat Kachumber Salad:

Make the dressing. Chop all the ingredients using a chopper – this chopper works so well. Assemble the salad and top with dressing.

1. Can I make this recipe vegan?

This salad is vegan.

2. Can I make this recipe gluten-free?

The papdis are not gluten-free, so for a gluten-free option, you can omit them or use gluten-free chips. 

3. What can I use instead of paper?

If you don’t want to use papdi, as mentioned above, use tortilla chips. It works great in this recipe.

4. Can I serve this salad at a party?

Yes! This kachumber salad makes a great healthy appetizer. Simply place the contents into cute little martini glasses and serve with a couple of papdis. It looks pretty and everyone can help themselves. This is a great salad to make for Diwali.

5. Can I skip the olive oil in this recipe?

Yes! You can skip the olive oil, but you’ll need to add additional cilantro and tamarind chutneys for more liquid.
