Campfire Dinner Meatloaf Foil Packets
I used to go camping all the time when Karina was little. On one camp out, Tommy made us meatloaf in foil he learned when he was a young boy. I took that idea and added a healthier spin, using a variation of my turkey meatloaf and adding vegetables to make it a campfire meal. When you want easy grilling, foil packet meals are perfect for weeknight dinners with easy clean-up! My preferred foil for grilling is Reynolds Wrap Heavy-Duty Aluminum Foil which is a heavier gauge foil than standard Reynolds Wrap, which is perfect since you don’t have to worry about breaking or tearing, even with heavier foods and it protects food over direct heat.
Summer Succotash
Succotash is great in the summer, the key ingredients are corn and lima beans. You may not know this about me, but I am not a fan of lima beans so I always use edamame in their place. Red bell peppers and shallots add color and flavor, feel free to swap in vegetables you like.
How To Make Foil Packets
Tear off a 16” sheet of foil. Center the food on the foil sheet. Bring up the long sides of the foil, so the ends meet over the food. Double fold the ends, leaving room for heat to circulate inside. Double fold the two short ends to seal the packet. Grill covered directly on the flame according to directions for 10 minutes, then move to indirect heat for the remainder. If cooking this over a campfire, you may have to adjust the cook time and move the foil packets around to prevent the bottom from burning. To bake in the oven, preheat oven to 425F and cook 25 to 30 minutes.
Variations and Tips
To make this super easy, you can swap the succotash with frozen or canned mixed vegetables. If you’re not a BBQ sauce fan, swap it for ketchup. If you use 99% turkey or chicken here, the Weight Watchers Smart Points will be 4 SP per serving. For convenience, when I go camping I make and prep as much food as I can at home. You can prep the meatloaf ahead, leaving the BBQ sauce off, and assemble them when you arrive.
