I recently had a couple girlfriends over and made this Apple Pie Baked Oatmeal for brunch which is essentially baked apple pie in oatmeal form, sans the fat. Imagine that. My version consists of apples, oats, raisins, pecans, cinnamon and almond milk. Clearly, this recipe is healthy, however feel free to add a tablespoon of melted butter to the egg batter for slight richness. A little butter around the holidays doesn’t hurt, coconut oil would work well too....
